Answer: Sinjeon has been around temples of South Korea since birth and, because of this, has always had an affinity for dragons. Dragons are commonly found in korean temple architecture, and seeing them so frequently caused Sinjeon to naturally and somewhat involuntarily favor them over other animals and mythical beings. However, seeing as dragons don't exist, Sinjeon became captivated with another animal; the Mongolian Race Runner. Its long, twisty body resembles that of the Korean dragon, and he is thoroughly fascinated with the lizard.
As said, they are endangered in South Korea, so he doesn't see them extremely frequently. However, this makes things more exciting for him when he does stumble across one. When he doesn't have any around, he just returns to the temples to stare longingly at the crafted dragons, hoping to see his favorite animal again.
