I'm not trying for her, but I am curious. Will it be possible that say, one day in the future, you're doing a breeding and find out that she's like the 7th great grandmother or something, will it be possible the foal could be surprise mane style like great-whatever-grandma?

No. I want her to stay unique, besides, if something like this happened, it would start a whole new kind of equid and it would lead to confusion and other complications.
