Favorite Recipe: Bromabakery's fudgy raspberry brownies go triple platinum in my household, maybe not your typical summer treat but they are fantastic year round and I have fond memories of these as my birthday "cake", I also like to fold in chunks of chocolate if I'm feeling partially chocolatey. These are amazing served warm (with a little scoop of vanilla or your choice of flavour ice cream), lukewarm out of an airtight container or even cold from the fridge, the raspberry is such a nice tang to contrast the rich chocolate taste.

Favorite Recipe: It might not be what you typically think when you picture a summer treat, but we always love to make this Oreo icebox cake. It's cold and so refreshing! We also like to layer in fresh strawberries for texture and flavor. It's actually really, really good, especially in the dog days of summer!

Favorite Recipe: Apologies for the lack of credit, I cannot remember where I got this recipe. Nonetheless, pulling out one of my fav summer time desserts from my archive of recipes...
To make Texas de Brazil-style pineapple carpaccio, grill whole peeled pineapples coated in a mixture of butter, brown sugar, cinnamon, and vanilla until caramelized. Slice the cooled, grilled pineapple as thinly as possible (ideally with a meat slicer or very sharp knife) and arrange it in a carpaccio-style layer.

Texas de Brazil Style Grilled Pineapple Carpaccio
Prep Time: 10 mins
Cook Time: 15-20 mins (grill) or 1.5 hours (oven)
Chill Time: 1-2 hours

Ingredients
1 Fresh Pineapple (peeled, core removed)
1/4 cup Butter, melted
1/2 cup Brown Sugar
1 tsp Cinnamon
1 tsp Vanilla Extract

Instructions
Prepare the Pineapple: Peel the pineapple and remove the brown "eyes." You can leave it whole for roasting or slice it into spears for faster grilling.
Make the Glaze: Mix the melted butter, brown sugar, cinnamon, and vanilla extract in a bowl.
Cook the Pineapple:
Grill Method (Best): Brush the pineapple with the butter mixture and grill over medium-high heat for 2-3 minutes per side until caramelized and browned.
Oven Method: Roast the whole pineapple at 350ยฐF (175ยฐC) for about 1.5 hours, basting with the sugar mix, until tender.
Chill and Slice: Allow the pineapple to cool completely in the refrigerator (or overnight). Using a meat slicer (set to #12) or a very sharp knife, slice the cold pineapple into paper-thin slices.
Serve: Arrange the thin slices overlapping on a platter. Optional: Drizzle with extra sugar syrup or a hint of lime juice for brightness.

I know it sounds kind of weird, but grilled pineapple is BOMB and not too heavy when it's super hot outside! Especially since you serve it chilled.

Favorite Recipe: mango kulfi !!!!!!!!!!!!! my recipe (i dont measure so ingredients arent super accurate im sorry i am like my MOTHER). also this is the fast recipe version bc the more authentic way is to use whole milk and cook for at least an hour. so. ya

ingredients: mangos (sweet ones obvi, i use kesar mangoes or honey / ataulfo, alphonso, etc., i use at least 3 large ones to make 1 cup of pureed mangoes), 1 cup heavy cream, 2 tablespoons of milk powder (full fat), 1/2 cup of sweetened condensed milk, 1 teaspoon of ground cardamom (it is best to freshly grind it from the whole green pods!!), 1 to 2 tablespoons of chopped pistachios (optional), saffron (a few strands...like 6)

1. soak the saffron strands in 1 tablespoon of hot water for 5-10 mins
2. peel mangoes and put the flesh into a blender, blend them into a puree
3. add whipping cream, milk powder, and sweet condensed milk with the pureed mangoes in the blender
4. add the soaked saffron alongside the liquid (it's like a magical essence :3), and the cardamom powder
5. blend blend blend
6. add the chopped pistachios (but dont blend that)
7. pour the mixture in your fave popsicle mold, and put it in the freezer for 6+ hours to overnight
8. eat it all

Favorite Recipe: A personal favorite of mine [especially in the summertime] are these scrumptious raspberry lemonade cookies! I make them every year for my partner's birthday, and they're a huge hit. I generally bake a large quantity to also bring some to my neighbor's kids, who also really enjoy them. If you're not a fan of overly sweet flavor profiles, these might be perfect for you!
