Edit: regarding your second breeding, the first horse you want to breed is gray, but all gray horses had a color before they greyed out and that is there genotype, so do you know what her original color was?

Grays can be any color. Lipizzaners are black then go gray as they age, but other horses can be chestnut, bay, roan , grullo, etc. before they go gray so it is totally up to you!
