"There are sooo many great cakes and cake recipes. I love all of the cakes, partly because the more cakes in existence the better place the world will be, but mainly because they taste good! Cake comes in many shapes, sizes and textures — and I adore them all. Scratch that, I am obsessed with them all.
No matter how full I am, at the end of the day all I really want is cake. Especially since I babysit little kids. They wear me down, but cakes makes all of the ringing in my ears go away. I'm always up for baking cakes. New cakes, old cakes, tall cakes, short cakes- ALL CAKES! I love baking new recipes and trying them out for the first time. I don't have any favorites- they are all too good! Sometimes I'll bake a cake with the kids I'm caring for, if I think the parents would be fine with that anyway. They usually don't mind, or are a little bit excited, but only ever once has someone gotten mad. (We never leave any messes though.)
My obsession over cake has gotten to the point where I have broken a phone. I leaned over while texting, and accidentally dropped it over & into the buttercream that was being stirred. Not only did frosting get into the ports, but the mixer broke it too. That's part of the reason why I mix everything myself nowadays. I didn't mind the fact that my phone was destroyed. At the time I was already going to be getting a new one in the next 3 weeks and the cake & buttercream frosting that came from that was delicious!

..Why she loves cake:.
Gretchen has always loved cake. Well, she's always loved sweets in general, but cake always stuck out to
her. Living in her parents' bakery her entire life, Gretchen was exposed to baking very early on in her life.
She would always hang around in the kitchen and watch her parents and the other bakers make sweet
treats to sell at the store front. If she was lucky, someone would sneak her a cookie or a scone, and when
they were catering for bigger events, she would get things like tarts, mini cheesecakes, and more. Even
though she got to try pretty much all of the sweets and baked goods sold at the shop {whether she was
allowed to or not}, she never really got cake. As a child, Etch knew that she wanted to try that cake no
matter what - there was only one problem. The cake at the bakery was only made for special events or by a
customers order. Gretchen's family just didn't have the money for making cake that wouldn't all be eaten
and would just spoil or crust up in their display cases. Unfortunately, this also meant that there was no way
Gretchen could get any cake unless someone else bought it for her {remember, she's just a child, so she
doesn't really have the money to buy a cake from her family's bakery}. Even though she asked around - her
friends, family, the other employees - Gretchen could never find someone who could afford a luxury like
that {she lived in a pretty poor town and most of the cake orders came from out of town}. Eventually she
decided that, since there was no other way, she was going to do it herself - Gretchen was going to make
her own cake! Even though she had no experience in baking yet, Gretchen knew where to find the recipes
and ingredients, and there was no way that Gretchen wasn't going to get at least one slice of cake. So, one
late night, Etch snuck into the kitchen and got out the recipe for Vanilla Bean Cake with White Chocolate
Ganache, which she knew they had the ingredients for. She started off by gathering the ingredients as
quietly as possible and from there, well, she had no idea. What did it mean by 'separate the eggs'? How did
she pre-heat the oven? It was safe to say that Etch had gone into this blind, but even still, nothing would
stop her from making this cake! It didn't take her long to figure out how the oven worked and, even though
the computer was absolutely off limits for Etch, she looked up how to separate the eggs. Before long, she
was working on making her cake and things were going well. Sure, there were a few mix ups here and
there - a bit too much flour, a few eggshell bits - but Gretchen was positive that everything was working
well. She finished up mixing together the ingredients for the main cake, poured them into her pans, and
started baking them {although she was a bit nervous when they started baking, seeing as she'd never used
the oven before}. While they were baking she started up on the ganache, icing, and filling. Before Etch
even realized, the cake was done baking. She took it out, making sure to be very careful with the burning
hot oven and pan, turned to oven off, and left the cake to cool. She finished up everything else and left it
all out to cool a bit, feeling a bit tired now {it was definitely way past her bedtime}. Coming back once it
had cooled down, Gretchen began to put the cake together. She cut the cake, spread out the fillings,
covering it in icing and put strawberries on top. This was it, the thing she had been waiting for for so long
- a cake made in her parents' bakery! It looked amazing, although not as amazing as one of the cakes her
parents made, but even still, she was proud. She felt to tired to eat, however, so she decided to stow away
the cake in their fridge. The next morning, Etch woke up bright and early to get a piece of her cake!
Unfortunately, her parents also got up early and saw her cake in the fridge. It took a bit of explaining, but
in the end, Gretchen got off clean! Well, she was grounded for two weeks for using the shop's ingredients,
but her parents also told her how proud they were that she seemed like such a natural baker. They had her
cake at dinner that night, and Gretchen had to admit that finally trying the shop's recipe was better than
pretty much anything she had ever not in her life before.
