What are Khimaira Friesians?
Khimaira Friesians are a "normal" friesian breed with all characteristics of a friesian and a average height from 15 to 17 hands, but even 18 hands can occur. The first born Khimaira was mistaked for a chimera horse. But a genetic test showed otherwise, there wasn't a second DNA but a complete new and unknown gen. Because this gen makes the friesian look like a chimera it was named khimaira. khimaira doesn't produce a complete new dna coat and therefor it can only lighten or darken the base coat of the horse. Till now only the paint khimaira is known that makes the khimaira coloration looks like tobiano, overo, sabino or splash. But we believe that there will be more khimaira variations out there and we still try to breed them. Appaloosas are not known till now, but we have some great friesian mixed horses with appaloosa patterns, so we are sure to deliver them to you in a short amount of time.

Ingredients:

Cake:
1 cup (250 ml) unbleached all-purpose flour
1 teaspoon (5 ml) baking powder
1/4 teaspoon (1 ml) salt
3 eggs, separated
1 pinch cream of tartar
1 1/4 cups (310 ml) sugar
1/2 cup (125 ml) unsalted butter, softened
1 teaspoon (5 ml) vanilla extract
1/2 cup (125 ml) milk


Vanilla Strawberries:
1 vanilla bean
or
1/2 teaspoon (2.5 ml) vanilla extract
1 1/2 cups (375 ml) sliced fresh strawberries
1 tablespoon (15 ml) sugar


Whipped Cream:
1 1/2 cups (375 ml) 35% cream
3 tablespoons (45 ml) sugar
1 teaspoon (5 ml) vanilla extract
Fresh strawberries, whole or cut into wedges for garnish


Preparation:

Cake:
1.With the rack in the middle position, preheat the oven to 180 °C (350 °F). Butter a 20-cm (8-inch) springform pan and line the bottom with parchment paper. Set aside.
2.In a bowl, combine the flour, baking powder, and salt. Set aside.
3.In another bowl, beat the egg whites and cream of tartar with an electric mixer until soft peaks form. Gradually add 125 ml (1/2 cup) of the sugar, beating until stiff peaks form. Set aside.
4.In a third bowl, beat the remaining sugar, the butter, egg yolks, and vanilla with an electric mixer. At low speed, add the dry ingredients alternately with the milk.
5.Stir a quarter of the meringue into the batter to lighten it. With a spatula, gently fold in the remaining meringue. Pour into the prepared pan.
6.Bake for about 55 minutes or until a toothpick inserted in the centre of the cake comes out clean. Unmould immediately and let completely cool on a wire rack.


Vanilla Strawberries:
7.Split the vanilla bean in half lengthwise. With the tip of a knife, remove the seeds from the vanilla pod.
8.In a bowl, combine the strawberries, sugar, vanilla seeds, and pod. Allow to macerate for about 15 minutes. Drain. Remove the pod. Set aside.


Whipped Cream:
9.In a bowl, whip the cream, sugar, and vanilla with an electric mixer until stiff peaks form. Set aside.


Assembly:
10.Cut the cake in half horizontally to make two slices. Spread 250 ml (1 cup) of the whipped cream on the cut side of each slice. Scatter the drained vanilla strawberries on the whipped cream of a slice of cake. Cover with the other slice of cake, whipped cream side down. Garnish the top of the cake with the remaining whipped cream. Garnish with fresh strawberries.

2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
2 tablespoons sugar
3/4 teaspoon salt
1 1/2 cups heavy cream
Whipped Cream, recipe follows
Whipped Cream:
1 1/2 cups heavy cream, chilled
3 tablespoons sugar
1 1/2 teaspoons vanilla extract
1 teaspoon freshly grated lemon zest

refrigerate while juices develop, at least 30 minutes.
2. Preheat the oven to 400 degrees F.
3. Sift together the flour, baking powder,
baking soda, remaining 2 tablespoons sugar,
and salt in a medium bowl. Add heavy cream
and mix until just combined. Place mixture
in an ungreased 8-inch square pan and bake
until golden, 18 to 20 minutes.
4. Remove shortcake from pan and place on
a rack to cool slightly. Cut into 6 pieces and
split each piece in half horizontally.
4. Spoon some of the strawberries with their
juice onto each shortcake bottom. Top with a
generous dollop of whipped cream and then the
shortcake top. Spoon more strawberries over the top and serve.

Using a mixer, beat the heavy cream, sugar, vanilla,
and lemon zest until soft peaks form, about 1 1/2 to 2 minutes.

1. Slice or quarter the strawberries and place them into a large bowl. Cover with granulated sugar and stir. Cover and refrigerate the strawberries while you make the shortcakes so they can get juicy.

2. Preheat oven to 425 degrees F. Line a large baking sheet with a Silpat baking mat or parchment paper. Set aside.

3. In a large bowl, sift together the flour, sugar, and baking powder. Mix in the salt. Add the small pieces of cold butter and use a pastry blender, fork, or your clean hands to cut the butter into the dry ingredients. Mix until you have pieces that are the size of peas.

4. In a small bowl, stir together the cold heavy cream and vanilla extract. Pour the mixture over the flour mixture and stir until just combined. Turn out onto a lightly floured surface and lightly knead the dough together to incorporate all of the crumbly dough pieces. Do not overmix.

5. Press the dough into a circle, about 1-inch thick and cut into rounds, using a biscuit cutter. Place the biscuits on the prepared baking sheet, about 2 inches apart. Place the pan in the refrigerator and chill the biscuits for 20 minutes before baking.

6. Use a pastry brush to brush the chilled biscuit tops with heavy cream. Sprinkle tops generously with sugar.

7. Bake the biscuits until golden brown, about 15-20 minutes. Let cool completely.

8. While the biscuits are cooling, make the whipped cream. In the bowl of a stand mixer, whip the heavy cream, sugar, vanilla, and pinch of salt together until the cream reaches stiff peaks.

9. To assemble the shortcakes, cut the biscuits in half horizontally. Spoon the strawberries over the bottom of the biscuit and add a dollop of whipped cream. Top with the other biscuit half. Add more strawberries and whipped cream on top, if desired. You can also break up the biscuits and top them with strawberries and whipped cream or leave them whole and add strawberries and whipped cream on top.
