I'd combine some form of Pirhana with a Horse!
Depending on the exact subspecies of Pirhana and exact breed of Horse used in the combo the name could possibly change. But overall I'd go for Equirana ^-^

I would combine cows and cats so I could have a cat big enough to ride on it's back, with the bonus of it being extra laid back lol

i think id do a giraffe and a chicken in attempts to create either a giant sized chicken or give a chicken a long neck. it would be called the Gericken

I think I would have to mix a platypus and an Okapi, two animals that already look like mashups of other animals!
Its name would have to be something like "Everything together" but in latin, which in an online translator is, "Omnia simul"

I would combine fancy pigeons (any and all kinds) with fancy rats/mice (any and all kinds). Just imagine the different plumage and feather combinations! You always hear people comparing rats/mice and pigeons anyway, but no one ever wants to talk about the fancy non-exclusively-grey ones! I'd call them exotic fancy mivians-- mice-avians. :3

Making a prompt to come up with new adoptable species huh? /lh I'd mix together a Vulture and a Horse, No specific mixture of breeds yet but they'd be called Carrion Pegasi or something similar. I think they'd be terrifying but pretty like a lot of animals, plus I just really like both vultures and horses haha
