If you do not know the list, please do not try and give out advice.
Going from the conversations in regard to the UR Holly, It looks as if it is hovering from Non level to GWJ level.
In any case, as far as conversations are going since it hasn't been put on the list, It can go for whatever you want it to go for as of right now.
It isn't been discussed to be placed higher on the List than the Non level from what I have read in the last 30 odd pages of the Rare's List, so with that said, it is unfair to the UR lion.

In the eyes of rarity this is quite unfair to you, the shima being an 09 rare and the cat being an advent list. As for demand the shima has pretty high demand however this remains unfair in my opinion of what I have seen, get some other advice first however

Technically they would need to add 4 or 5 or so more 09 rares on the Shima side of the trade. However, since the demand of the Shima is way overpriced, it would be up to you and the trading partner to determine the demand of the Shima in this trade.

The UR Cat does have a little bit of demand, however I do not believe it has enough demand to be worth another Sorbet, therefore It is unfair to the Zebra from how I see it.

Perfectly fair. I am sure that the demand of the warrior cat, I assume it is one, would be the same as the demand for the Shima.Luan pet.
