No, they cannot, as 'Each Tarisia Dragon could use only ONE Fire-option!And many fighter Moves' meaning they use only their fire and fighting moves, no weapons included.

What do the different fires do? Like demon fire, how is it different from volcano ect.

Volcano fire is as it sounds, like fire from a volcano. Demon fire is more 'dark' so to speak. Ice Fire is like it sounds too, like ice. Some fires might be more acidic than others, or might be 'darker'. They use these fires to fight, so each fire fits the TD differently.
