A sub-fursona is a partial representative. Like an anima, but more important.
And if that's not okay, can I just make an eyeless wolf or dog?

I don't quite see the difference. An anima can also be important, and your fursona just represents you in a more animalistic form. Having a sub-fursona seems a bit weird.
But before I dwell off..
I don't think Tracker Dogs are fursona/anima material. They're not created by you, nor would they actually represent a certain feature of yourself. You can use a Tracker as a character though.
