Hi hopes it's okay I recommend a completely different dog breed but I thought of it well reading your post and figured I might as well mention it.
The breed that your post really makes me think of is a Nova Scotia Duck Trolling Retriever. Some pros are they are high energy and very intelligent so they're great for training, I've heard of them being trained to be therapy dogs (not to sure about service dogs) and since they're bred for hunting ducks they tend to preform really well in dock diving. They're also know for being pretty play driven which can help with training and generally get along well with other dogs and are okay strangers. Overall I think their temperament and energy level is pretty close to what your looking for (and their around medium sized) however there is definitely some cons. First they're hunting/retrieving dogs so they have a strong prey drive and as said before very energetic, possibly more so than your looking for, but I do often see them as family and sport dogs. Also they are double coated and can be somewhat stubborn, but probably the biggest issue with them is their availability. Apparently they are considered a rare dog breed, where I live it's not to rare to see them around but i believe in other countries they can be quite difficult to get a hold of so you might actually not be able to find a breeder.
They not might not really match what your looking for but maybe looking at dogs that are similar to them can help you find the perfect breed for you if you decide to go with a different breed from the ones you suggested all together.
