You would need to search the nursery for your kalon's batches, as staff do not keep track of them; it is on the owner of the kalon to keep track of the slots nvn

If making a kalon have blank red eyes, would that be covered under an uncommon edit, or would I also need a non rarity edit for sclera?

It depends on what you mean by "blank red eyes" but.
1 would be a sclera colour edit so it'd be NR (all lines remain unedited), while 2 and 3 would require a UC edit (to remove pupils/iris) on top of the NR edit for sclera colour.
(If you're making this as a MYO though, sclera colour changes don't need a specific edit.)

CSS stands for "CS Shop" and refers to kit pickers specifically purchased from the C$/CS pet-based shop that was open at the time.
Those items have specific rules attached to them because they were purchased from the CS Shop/due to purchase limits per person, being that "breeding items that have CSS in the name are NOT TRADABLE. Don't offer them for trade, or accept them as a trade. Any trades found with CSS labeled items in them will be reversed".
