I'd probably be a jolteon.
Jolteon's often cannot control their temper, and won't hesitate to shock someone in frustration. They often lose control. Often mood swings make it really hard to train them. They have low stats compared to their fellow eeveeloutions, also causing frustration. Jolteon is "a sensitive Pokémon that easily becomes sad or angry. Every time its mood changes, it charges power."
According to the pokedex in let's go eevee and pokemon yellow.

I took a huge break from this, putting it off a day or two due to being sick, so yeah uh..
