Their dog is worth about a mid-late '09 rare due to extended release (originally from 2008), and your store pet is worth a late 2009 rare. I'd say this is about fair. ^^

Would this be fair if I took away one of the 2011 store pets?

Unfair to them. Their side is worth roughly 13 rares '09 and the tinsel lion is worth 5-6 rares '09.
'11 store pet = 2 rares '09 + rare '10, so the trade would still be unfair to them.

Would it be more fair if I took 2 of them away?

The second trade is worth the most out of all of them, and they're even overpaying. ^^

Which would be better to take? <3 having a auction on my kitsune, so just wondering.

The second trade is overpaying more than the first trade, but the second trade also has low demand species (not sure if you're into ponies/rats). It's up to you which one you want, both are paying more than the worth of the Kitsune. ^^

If you take away 2 of the 2011 store pets, their side would be worth a little more than 6 '09 rares, which the Tinsel Lion is worth 5-6 '09 rares so it'd be slight overpay then. I suggest they remove the 2011 uncommon and 2017 rare as well so this can be fair to both sides. ^^

Only taking away one of the 2011 store pets would still be unfair to them. (:
