Fantasy/mythology themed ones. Such as Medusa, or Hercules, or maybe little red riding hood.
I personally love the nature themed adopts. Maybe a forest guardian. Or a Spirit of spring/summer/autumn/winter.
Bird themed ones. (Such as a cardinal or blue jay. Maybe a parrot.) Hyena, calico cat....hmm...
A 'fishtank' themed one. Where it is like a fishtank inside? xD
