What are Khimaira Friesians?
Khimaira Friesians are a "normal" friesian breed with all characteristics of a friesian and a average height from 15 to 17 hands, but even 18 hands can occur. The first born Khimaira was mistaked for a chimera horse. But a genetic test showed otherwise, there wasn't a second DNA but a complete new and unknown gen. Because this gen makes the friesian look like a chimera it was named khimaira. khimaira doesn't produce a complete new dna coat and therefor it can only lighten or darken the base coat of the horse. Till now only the paint khimaira is known that makes the khimaira coloration looks like tobiano, overo, sabino or splash. But we believe that there will be more khimaira variations out there and we still try to breed them. Appaloosas are not known till now, but we have some great friesian mixed horses with appaloosa patterns, so we are sure to deliver them to you in a short amount of time.

Ingredients
1/2 cup water 
1 tablespoon yeast 
1/4 cup shortening 
1/2 cup sugar 
1 teaspoon salt 
1 cup boiling water 
1 cup evaporated milk 
2 eggs, beaten 
7 1/2 cups flour 
1 quart vegetable oil for frying 
1 cup confectioners' sugar for dusting


Directions
* Pour 1/2 cup room temperature water into a small bowl. Sprinkle the yeast over the water and let stand for about 5 minutes to dissolve.
* Combine the shortening, sugar, and salt in a large bowl. Pour the boiling water over the shortening mixture and then stir in the evaporated milk. Wait for the mixture to cool down until it is lukewarm. Then, add the yeast and water mixture and beaten eggs.
* Slowly mix in the flour until the dough forms a ball. Cover the dough with plastic wrap and refrigerate for 30 minutes to 1 hour.
* Working with a small portion (a little larger than a baseball) at a time, roll out the dough 1/8-inch thick. Cut the rolled out dough into strips 2 to 3-inches wide, then cut again in the opposite direction and at an angle, making diamond shapes.
* Heat your oil for frying in a deep and wide, heavy-bottomed skillet over medium-high heat to 360 degree F (180 degrees C).
* Slide dough slowly into the oil to avoid splattering and deep fry until they puff up and are golden brown, 3 to 5 minutes. Carefully remove onto a rack with paper towels underneath and allow to cool until you can handle them. Place in a clean paper bag with confectioners' sugar and shake gently until covered generously or, use a sifter to dust the beignets with powdered sugar.

Background Info:
Sobek was the king. He reigned supreme. And he was lonely.

Sobek was a social creature, and loved company of any kind,
but particularly that of pretty mares. He was the supreme
millionaire playboy, minus the millionaire part. The only thing
he had to his name was a warm stall and a large swath of beautiful
swamp kingdom. He loved roaming his domain, watching all the
insects buzzing around, minding their own business and all the
croaking frogs, swimming around his feet and croaking in the leaves.
He was enamored with the natural beauty of the swamp, and wished
for someone to share it with. To his dismay, all of the lovely mares shied
away when he offered to show them his swamp. They saw none of the
beauty and only the muck and filth that hid beneath the shallow water.

So Sobek has learned to split his time, some of it flirting with the lovely
mares and sweeping them off their hooves with his charm, and the rest
being swept off his hooves by the splendors of the swamp. He still hopes
to find the perfect mare for him, someone lovely, with a great personality
and who isn’t afraid to get a little dirty to see the true beauty of Sobek’s realm.

1. In a large bowl, dissolve yeast in warm water. Add milk, oil, sugar, egg and 2 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky). Do not knead.
Cover and refrigerate overnight.

2. Punch dough down. Turn onto a floured surface;
roll into a 16x12-in. rectangle. Cut into 2-in. squares.

3. In an electric skillet or deep-fat fryer, heat oil to 375°.Fry squares, a few at a time, until golden brown on both sides.
Drain on paper towels. Roll warm beignets in confectioners' sugar.

Grate the carrot and apple
Mix together all ingredients
Place mixture in baking tray
Bake for 40 minutes or until golden brown
Cool for four hours in refrigerator

Story
We actually found this guy while on a beginning of a fund raiser TV show, "The Legend of the Rougarou" where we went into the Swamps of Louisiana in search of the Mystery monster. We really weren't sure what we were going to find out there, but we did it anyway. Of course we brought a few of Our already owned khims, as a link to them and the fundraiser, including our Hippocampi that allowed us to look underwater in areas we couldn't get our camera's into without him. He was a tricky transport but a trailer has been specialized just for him. In between filming Neptune seemed to be completely distracted by something but he is young so who's to say it wasn't anything that could catch his attention in a new place. We left it alone until we heard rather loud splashing, the lot of us running to check on him. Sure enough he had found a Khim in this Swamp, at this point Gator was covered in moss and algae and his mane and tail were browned by the mucky waters, we could barely see his markings. When we approached Gator seemed to come right to us as Neptune did, we were shocked but decided to take him home, many of the crew members cracked jokes about finding their first gator in the swamp, so it became his nickname. After we had gotten home and cleaned him off with usual inspection, we found out he isn't much older than Neptune. We might not have found the Rougarou Monster but we sure found a legend of our own.
