Meal Idea -- Red Thai Curry Noodle Soup (15 mins - also you may want to cook the veggies longer since they'll still be crunchy)

Coconut Corn Chowder

Honestly just look at all of these whenever you're hungry and want to make a meal in 20 minutes or under x

I know we can list multiple, and I get the vibe not too many, but I am gonna go overboard cuz darn it Nodell EAT SOMETHING. PLEASE. I really don't care anymore if I don't win anything, just use this post and all the others for a meal please. You can just glance over this if you really want, but please, just eat SOMETHING.

Color palette -- Grey's maybe??
Edits you'd like to see -- Uncommon ears, maybe some shorter fur?? And of course a common tail and shine. Honestly anything would be great, but a fluffy mane and backmane is nice too!

ingredients

pot
knife
metal oven pan
olive oil
hidden veggie pasta
butter
salt
garlic powder
grated/shredded cheese
tea bags
sugar

░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░
recipe

Fill pot 75% with water and set on stovetop to boil.
While waiting, slice hamburger bun in half horizontally (giving you two thin circular pieces of bread.) Spread butter onto both, sprinkle on cheese and garlic powder. Place on oven pan and bake for 6 minutes at 250 F / 120 C -or-
until the cheese is partially melted.

Once the pot is boiling, break pasta in half and place in pot cautiously so that the water covers it. Add a few shakes of salt (less than half of a tablespoon) and a drizzle of olive oil*. Turn the heat off after about 10 minutes. Strain the water out of the pot and pour the pasta into a bowl. add salt, olive oil, butter, and/or sauce.*

Fill a glass with water and microwave it for 2 minutes. Place a tea bag in and stir it lightly with a knife. Add sugar (about 2 tablespoons) or artificial sweetener. Stir the sugar in, then let the tea bags sit for another 2 to 5 minutes. For hot tea, drink as soon as it's cooled to a comfortable temperature. For iced tea, transfer to a larger glass, add ice cubes, and stir.

░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░░
notes

*If you plan to add sauce to your pasta, don't use the oil. It prevents the sauce from sticking. If you eat it without  sauce, the olive oil gives it a better flavor.

Hidden veggie pasta gives you some nutrition from vegetables without having to taste any of it. It's usually in the grocery store next to the regular pasta.

I eat this once or twice a week when I’m home alone or my family is having something that I can’t eat because of sensory issues. The cheesy garlic bread is my mother’s recipe.

Total cooking time is 15 minutes if you set the pot on the stovetop to boil before you make the garlic bread. Putting the ingredients together and serving it takes less than 5 minutes.

AN APPLE A DAY...
┏─────────────────────────────────────────────┓

...KEEPS THE DOCTOR AWAY

Meal Idea:
I decided to add one breakfast, one lunch, one dinner and one snack option which can all be prepared at once if you have the ingredients on hand. If you do all four at dinner time (which I think is the most convenient meal to have freshly prepared food for) then you don't have to worry about breakfast and lunch or a snack for the next day, you just store them until they're needed!

As an extra note, if you are a fan of vegan/vegetarian food blogs I can not gush enough about Cookie and Kate. I've tried a number of Kate's recipes over the last few years and they've all turned out perfectly.

Please note for the breakfast and lunch recipes below I'm going to put the essential ingredients and then in brackets a tried and tested version of my own (favourite combinations will be in green). Hope you enjoy these!

BREAKFAST:
Image
INGREDIENTS:
  • ⅓ cup of rolled oats
  • 1 tablespoon chia seeds
  • 1 tablespoon nut butter [Peanut/Almond/Cashew]
  • ½ cup milk [Skim Milk/Almond/Coconut]
  • ½ cup fruit [Grated Apple/Grated Carrot and Dried Cherries/Frozen Mixed Berries]
  • 1 tablespoon sweetener [Honey/Maple Syrup/Agave Nectar]
INSTRUCTIONS:
  1. Add all the ingredients together in a jar and mix well.
  2. Screw on the lid and give the jar a few shakes.
  3. Put it in the refrigerator overnight.
  4. In the morning, pour into a bowl and top with some in-season fruit and add extra milk/natural yoghurt if you desire.
    [Some alternative versions]

LUNCH:

  • Grains, Legumes or Pasta [Rice/Black Beans/Fusilli/Quinoa/Amaranth/Chickpeas/Edamame/Corn/Peas/Lentils/Cous cous]
  • Raw Vegetables [Red Onion/Snow Peas/Cucumber/Tomato/Carrot/Capsicum/Celery/Broccoli/Cauliflower
  • Cooked/Roasted Vegetables [Pumpkin/Sweet Potato/Carrot/Capsicum/Broccoli/Cauliflower/Zucchini/Eggplant]
  • Raw/Dried Fruits [Apple/Pear/Melon/Papaya/Pineapple/Plums/Peaches/Grapes/Cranberries/Cherries/Pomegranate/Orange]
  • Whole/Slivered/Raw/Roasted Nuts (optional) [Almonds/Cashews/Pistachios/Walnuts/Peanuts/Macadamia/Sunflower/Pumpkin]
  • Crumbled/Grated Cheese (optional) [Danish Feta/Bocconcini/Goat's Cheese/Cheddar/Blue Cheese]
INSTRUCTIONS:
  1. Create your dressing of choice and pour it into the bottom of the jar.
  2. Add your heavier/wet ingredients
  3. Add your lighter/dry ingredients and fixings - cheeses, nuts etc then grains (if any).
  4. Add your leafy greens last.
  5. Screw on the lid and refrigerate.
  6. When you are ready to eat, pour all the ingredients into a large bowl and mix thoroughly before consuming!
    [Some alternative versions]

DINNER:
Image
INGREDIENTS:
  • 1 whole butternut squash/pumpkin
  • 1 tablespoon ground cumin
  • 2 - 4 cloves of garlic
  • 2 - 4 teaspoons Extra Virgin Olive Oil
  • 4 cups of vegetable stock
  • Salt/Pepper/Dried Chilli Flakes/Choice of Herbs/Spices to season
INSTRUCTIONS:
  1. Preheat the oven to 400F/200C. Cut the squash in half and remove all the seeds then peel off the skin and cut into smallish cubes.
  2. Spread the squash cubes on a tray on top of baking paper with the garlic cloves, drizzle over the oil, sprinkle the cumin and toss everything together with your hands. Spread it out evenly before adding to the oven.
  3. Cook the squash and garlic for 30 - 40 minutes, until the cubes are tender (a skewer/fork passes through super easily)
  4. Remove the squash from the oven and let it cool for 5 - 15 minutes.
  5. Add squash and desired amount of roasted garlic cloves to blender/food processor and blend thoroughly.
  6. Prepare your stock and slowly add to the blender/food processor until your soup reaches your preferred consistency.
  7. Add any desired seasoning (salt, pepper, chilli flakes, herbs, spices) to give the soup more depth in taste. Mix well.
  8. If the soup has cooled too much, pour it into a pot and heat it up on the stove.
  9. Serve with garlic bread, buttered toast, crunchy croutons, damper or slices of fresh artisan bread!

SNACK:
Image
INGREDIENTS:
  • 1 can cooked chickpeas
  • 3½ tablespoons sweetener [Maple Syrup/Honey]
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt
  • 4 tablespoons unsweetened baking cocoa
  • 1 - 6 tablespoons water (optional)
INSTRUCTIONS:
  1. Rinse the chickpeas well under running water in a colander.
  2. Remove the skin from each bean (easily done by pinching it between your thumb and index finger and squeezing gently).
  3. Combine all the ingredients (except water) in a blender/food processor.
  4. Blend for a minute until the mixture is smooth.
  5. Add water a tablespoon at a time and blend until you reached the desired consistency.
  6. Serve as a dip with slices of in season fruit. Choc Hummus works particularly well with fresh strawberries!
