History; Aria was born in the northern parts of the woods, hidden within the thickets of the forest. Her mother left her when she was born due to hunters in the area, no one knows how the hunters found that part of the woods, many parents left their offspring to flee, knowing they would be safer that way. As the hunters left, many of the parents came back for their offspring, but Aria' s mother never returned. A young mother bear adopted Aria, even though she had three cubs of her own, sadly, Aria's mother was shot by the hunters and the young bear mother knew that. As Spring turned into fall, Aria was much bigger and could see and hear now, she often wandered the forest wondering what happened to her mother, after a few weeks, Akala, the bear who adopted Aria told her about the hunters. Asia's heart sunk down as she became sad and grieved her lost, a few months passed as the bears went into hibernation for the winter. Aria decided to leave and look for other Kalons in the area, she searched far and wide with no luck, she knew they were here somewhere, probably hidden from sight.

INSPIRATION:
A dash of vision, a pinch of impulse, a smidgen of invention...
When I first saw this beautiful kalon, I thought of hazelnuts.
Then when I thought of hazelnuts, I thought of dessert.
Then when I thought of dessert, I thought of cookies.
Cookies to me are the ultimate comfort sweet food. I like them chewy, warm and served with a side of hot chocolate.

But where to begin? I've been transitioning to veganism since last November. I had created many savory dishes in my kitchen but had not yet braved the wonderful, magical space that is baking. I decided to challenge myself. I spent a few days researching various vegan cookie recipes on the internet. Most of them seemed simple enough, but they didn't quite contain the ingredients I wanted to use. It was important to me for the recipes to be gluten free. Not for myself or my partner, but because I wanted the majority of people to be able to eat the tasty morsels I created.

So...I can't use egg. I decided out of all the replacement vegan 'egg' recipes, a chia egg would be the easiest and most accessible for me to use. What about flour? I raided my pantry and saw some leftover chickpea flour that was bought by my husband when he was planning his vegan Valentine's Day meal chosen from a vegan cookbook he had given me for Christmas. Vegan butter has always been the easiest ingredient to find, I always keep some in my fridge as I'm a bread fiend. Nuttelex is the best brand of vegan butter in Australia, but I only buy the one made from coconut oil because the others are made from palm oil. So the basics were covered, what about the whole point of these cookies, the hazelnuts? I wanted them to be the stars of the show, so I decided to get fresh hazelnuts but also hazelnut meal to add as a second 'flour'. Chunks of dark, rich chocolate tossed into the batter would give a nice extra 'something' plus beneficial endorphins! Last of all I chose my sweeteners; being a fan of richness I decided brown sugar plus some maple syrup would give my cookies a more malty and rich depth of flavour.

The two recipes listed at the bottom of this post were what helped me to create the balance of my own version of hazelnut cookies. I also believe my success was due to beginner's luck. If I would change anything, on reflection perhaps I would have added a little more sweetness and either a bit more of a binder (chia egg) or cooked the cookies for a longer period of time. The only issue I really had was that they were quite soft so some of them didn't hold their shape successfully!

This kalon's name is also inspired by the Celtic tree calendar as 'bradán' means salmon!

INGREDIENTS:

• 1 tablespoon chia seeds
• 3 tablespoons water
• ½ cup Maple syrup
• ½ cup Nuttelex [or any vegan butter]
• ¼ cup brown sugar [or preferred form of sugar]
• 1 cup hazelnut meal
• 1 cup chickpea flour [or any grain-free flour]
• ½ teaspoon baking powder
• ½ teaspoon bicarbonate soda
• 1 tablespoon Frangelico liqueur [or any hazelnut liqueur]
• 125g Lindt Dessert 70% Cooking Block [or any vegan dark chocolate]
• 125g roasted/raw hazelnuts

INSTRUCTIONS:

1. Preheat oven to 180°C / 350° F. Line a baking tray with baking paper.
2. Prepare your 'chia egg' by combining the chia seeds with the water in a container. Set aside for 5 minutes.
3. Add dry ingredients (chickpea flour, hazelnut meal, baking powder and soda, sugar) to a medium sized mixing bowl and stir until combined.
4. Add the wet ingredients (vegan butter, maple syrup, chia egg, hazelnut liqueur) to a large mixing bowl and whisk thoroughly.
5. Stir the wet ingredients into the dry ingredients and mix until a sticky dough is formed.
6. Roughly chop hazelnuts and dark chocolate. Fold into dough.
7. Use a tablespoon to spoon dough onto the baking tray into rough ball shapes. Press down on each ball of dough with a wet fork.
8. Bake for 10 to 15 minutes. Remove from oven and allow to cool. Unless you can't help yourself.
