Ingredients
-2 small to medium very ripe bananas, mashed
-1 grated apple
-1-2 cups of honey
-1 tablespoon pure vanilla extract
-3 eggs
-1 cup Almond flour
-½ cup Coconut flour
-1½ teaspoons baking soda
-½ teaspoon salt
-2 teaspoons ground cinnamon
-¼ teaspoon cloves
-¼ teaspoon nutmeg
-1 cup grated carrots
-½ cup chopped walnuts
Instructions
Preheat oven to 350 degrees F. Grease a 9x5-inch loaf pan.
Mix together the bananas, apple, honey, vanilla, and eggs until completely combined. Add in the almond flour, tapioca flour, baking soda, salt, cinnamon, cloves and nutmeg and stir until all the ingredients are fully incorporated. Gradually, stir in grated carrots and nuts and raisins, if using.
Pour the mixture, which should be thick, into the prepared loaf pan and smooth the top.
Bake for 32-35 minutes or until the bread is golden brown and a knife comes out clean.
Let cool for 10 minutes and then transfer to wire rack to cool completely.
Once cool, take however much honey you'd like and drizzle on top of the bread.
