just a little color in, any tips or advice for making galaxies ?

How cute!! Not exactly for galaxies, but if you want to make your stars more shiny!!

use dots (in my case, I use solid or almost solid dots) and on a layer above it, set to "add" or anything similar to "luminosity", use the soft brush/airbrush around them and make more stars!! It should look like this:
