My favorites are Mapleshade, Mudfur, and Tigerstar.

I like Mudfur because he was someone you didn't expect to overthrow his own Clan.
Tigerstar showed that your influences affect your actions.
Mapleshade was just a pretty cool character and represented monkey's paw/a catch with every wish.
