I'm still learning to draw dragons also, I recommend looking up Wizards of the Coast artist William O'Connor. The Artist's Field Guide dracopedia is the best for anatomy research and getting inspired, it also shows how his book was made. His An Artist's Guide to Creating Mythical Creatures is also a staple.

A Practical Guide to Dragons by Lisa Trumbauer is also great, especially for anatomy studies. It has it's own dragon muscle and skeletal system, so it's really worth a read. It also has a "Dragon in Flight" drawing where the stages of getting off the ground and into the air are shown.
