i'd say you are offering way too much.
i haven't seen the foal going for more than a Sorbet in the past month(s), and the cookie is worth four.
i myself got two of them for around the worth of an red toxic each.

the gap between the cookie and mint horse is a bit less than 2 sorbets.
so you can probably get even more than the foal + horse, also considering that the Tess Horse doesn't have the best demand
