Do you plan on working them every day? Cuz technically every horse can be immortal provided you don't actually want to work them at all. xD I still have an Akhal-Teke stallion who is almost 25, but not immortal but i will just keep him and not work him ever again, as he hasn't got much use as a stud anymore anyways.
I know it's not the same thing, but it can be helpful until you can get a Stone.

I'm not sure if you can give a philosopher's stone to a greyfell, since it kind of defeats their purpose?

You can p stone a greyfell but your not ment to as its purpose is to DIE once a month , when it dies after 30 days it will give you 2 diamonds and 20 thousand equs and then you just bring it back to life using a Pandora box and start the whole thing again.

I don't ever remember getting anything from my greyfell dying? O-o How do I check my diamonds or whatever they are, I'm still new

The greyfell has to have survived for at least 30 days before dying so u can get rewards

But I have to send him to heaven? Is there no use in keeping him? Selling him? Should I let him die? I've revived him about ten times...why I don't know but it's nice having divines. I only have summer, winter and shenma other than him.

In order to get the reward- yes.
You can't keep aging him forever, as his health decreases incrementally every time he is aged, no matter what
I mean he still will exist so long as you have pandora's boxes.

If you don't want him to die and have to be revived again, you can't age him whatsoever
