I'm really really sorry. I know it seriously sucks to have your religious beliefs made fun of, and there's not much you can do about it either. (i'm atheist and have been teased/questioned rudely/insulted more times than I can count for that reason)
Some people can be really thoughtless , and whoever said that just shouldn't have. Period.

I'm just disappointed in myself since I really was motivated to take a religious studies course at my school, but I've become way too nervous about it now due to negative feedback and insults I've received. Just wish I wasn't so fragile when it comes to criticism, but ... here I am.

If you want to, I'd go for it and take the course. Especially if it's only for a semester- that way, if people get too bad about it, at least it's over then and you don't have to worry about them anymore- with still enjoying the class. You're not fragile- everyone is hurt by those remarks.
I don't know if this is the case with the people who have been insulting you or not, but some people that I know only want to disprove concepts about religion, and that can come off as offensive (I completely agree that a lot of those people are way too harsh). They don't really intend to insult any specific person or their decisions.
If I were you, I'd go for it and take the class. It seems like these people might be bothering you anyway regardless of whether you take it or not, so just enjoy yourself!
