I wanna do my new charrie with her mentor Giselle so I was wondering of that would count for both, neither, or one.

If you're keeping track of your achievements/goals on the Spreadsheet, it should be pretty apparent? Each achievement has (and will have) a separate column, so you fill it in when it's complete.

Yup, you definitely can!
From the FAQ post:

Yes, but you must double the limit! For example, an art piece featuring 3 characters has to have 3 separate fullbodies in it. A 1,000 word piece with 3 characters should be a 3,000 word piece. A 300-500 word piece with 3 characters will actually need to be a 900-1,500 word piece.
