This is the background: They are very gentle despite their fierce appearance. They dwell in the most warm places possible. They do interact with humans just not much. They are the ones who choose their rider not the rider. It may be hard to bond at first but they will always interlink their minds with them so they feel what you feel and vise versa. It might be hard to get settled down with a family seeing as you would live forever and they would not (unless they were elven) but that is usually disregarded as myth and done anyway. Living forever doesn't mean you can't die in this world there are many who have fallen to uncertainty and then death because they think they cannot be killed.
