It is somehing like that, said in both movies and books, last part, Severus' memories... Dumbledore says it, in which Severus replies: 'Which I do on your orders!'

I just finished re-reading HP 7 and I thought he said something along the lines of "But I don't want to put all my eggs in one basket, particularly not one that spends so much time dangling on the arm of Lord Voldemort." Although I could be wrong.
