along with all of the cats in that litter count towards the Largest Litter Non-Dog hoard? My hoard doesn't beat the record, but I was just curious. Would one specific type (ex. Sunback cats) count as a single variation Warrior hoard?

No, sorry this would still fall under largest warrior cat hoard. There are enough cat hoard categories to fit into. A single sunback does count as a single variation warrior though.
