I give up trying to actually finish a story/novel

NO! Don't you dare give up!
If you give up, you'll only regret it later, sure it is hard to finish something like that, and even harder to get it actually published (you could just post stuff online, but that's not the same), but it's going to be worth it.
There's no harm in trying again and again until you find the perfect thing for yourself to write, and you commit yourself to writing it no matter what happens in the end; it is healthy to be passionate about something.
Also you shouldn't worry about 'finishing' a story/novel, you should just write the story, and when it wants to stop, it'll stop, if you worry about when it's going to end, that's just going to stuff up your determination to finish the thing, and the story will stop at the wrong time; unfinished.
Just keep going, that goes for everyone too I suppose, and you'll realise once you stop stressing about it, writing the story is a lot easier.
I get stuck with this sometimes too, but giving myself a positive talk helps.:3
I don't know if this made sense, but I hope it encourages you to keep trying pie.

I thought up a plot for a story I'm writing, it's not exactly perfect, but I think it's a start. what do you guys think?

Mercy moves to Brighton with her cat [infinity] and meets Casta and his bullies, one of which is Zayn. She also gets to know Bree and Shea. So basically her cat turns out to be a soul-eater, and somebody murders Mercy, and she comes back as a soul, along with Zayn, who is also killed, and her former rival becomes an ally. Casta starts being possessed and Bree and Shea are still searching for Mercy to save her soul from the soul eaters. There would also be soul-hunters who hunt souls and put them in special containers and there are more and more deaths in the city, of unknown cause.

my plot idea. I'm still iffy about it ugh,

I'm taking a capstone [meaning like... an exit class; it's the highest level you can take for an undergrad degree] in poetry right now, and I'm trying to figure out my semester project, which is supposed to be a long interconnected series of poems. I have a topic and a title, but I'm worried that it won't be well received.

It's called "Harper," which is what I will name a child if I ever have one, and it's basically about the struggle to decide whether or not to have children and examining society's view of motherhood. I have a bunch of issues to write about, and I have written a very rough draft of the opening poem in the series. Please don't judge it too harshly, but I wanted some feedback on the concept.

Harper Lee published To Kill a Mockingbird
in 1960, the year my mother was born
and 32 years and 14 days
before I would be.
When Lee wrote that book--
when my grandmother held my 5 month old mother
to her chest--
what did they know?
Did they know my someday daughter might
be named Harper?
Did they see their own mortality,
How in 40 years my grandmother would
be dead, that I would be alive,
that I might never give grandchildren selflessly?
No.
But Harper Lee wrote a great American novel
as will I--
someday.
Even if no one sees it.
What defines the novel?
It’s only five degrees of separation at most
and getting closer.

Once I get into it further a lot of the content won't be CS appropriate, but this is so... yeah.

So I had enough motivation to actually finish a chapter of one of my books and then go ahead to start a new chapter in the other. Now I'm lying on the couch like a useless pile of procrastination and lazy that kind of doesn't want to do anything except crawl in hole and die. and I feel like writing depressing poems but my head hurts and I'm thinking too hard

well, sadly i can't do anything
due to reviewing for math
so like the only thing i can
do is do short rp scenarios
where it's like just a scene
