A 2011 store pet is widely thought of as being worth a 2009 rare I believe.
So I offer.

ALL WISHLIST... I feel it's fair, as that gryphon has nice demand and I need it for my set. I paid a little less to a little more for the others in the set, and I need this last one.
Cancelled almost right away with 'Sorry, not interested'
BUTBUTBUTBUT... they were wishlist... if you don't want them... why wishlist them and say 'wishlist only' in your rules? I would re-offer with more but I get a feeling it would get chucked back in my face, so I won't even bother.
This is where demand gets me... as there is no way of knowing what greedy people EXPECT for an in demand pet, and nobody is willing to work things out any more. They either cancel, or accept, nobody works things out -_-
I just... wish people would tell me WHY when they cancel. So that I can make a note of it for future offers. To be quite honest, my WL hardly reflects what I want. Sure, sometimes it does. Some I've already gotten but forgotten to take off, some are just there for Pound searching to make it easier to find rares.
On another note, i hate it when you can't decide. To take an unfair (But great) trade because demand on the pet sucks, or wait to find the odd miracle of a fair trade?
Oh don't get me wrong, I am in no way knocking people using their wishlist however they want ^_^ I'm just saying it upsets me not to get a reason on a cancel. If they were to simply say 'sorry, already got those' or something, fine, no problem at all. It's just not having a reason when I offered according to their rules and wishlist... which I subconsciously always take to mean 'you're not overpaying enough' I know that is an unfair assumption, but that is just how it comes over to me personally.
When someone says 'wishlist only' I expect that they will keep a roughly updated list for potential traders. If they do not say wishlist only, I do not hold that expectation of them :3
And yes... I can sympathize with your second point... this morning I very nearly offered a joker bunny on a black liontail... because demand for the joker bunny is in the toilet, and demand for the black liontail is through the roof. However, I slapped my hands away from the keyboard on that one... it was just too big of a jump for me to make -_-
