I feel bad for you, only 2 pets, high demand or not, aren't worth as many pets as they want (Least in my mind.)

Something like "I'm not sure if it's fair" or "Don't want to trade unfair, do you think its fair to both sides?" would be alright. Last one is the best, because you are more or less forced to make it fair (to both sides) 8D

Sent a trade, offering a bunch of pets(probably about 15), for some... 10? pets, I was looking for, asking if we could work on something from that.
Then the person cancelled, saying I should send it in two trades, because they don't like big trades.

Okay, I could have understood if I had added some 30+ pets on both sides, but I just wanted to know if they would be interested in trading some pets for those I offered. It's honestly not that hard to just remove some pets on each side, is it? :I Besides, I think it would be more annoying to be swarmed with lots of trades from the same person.. But that's just my opinion.
Ahwell. It's their call.
