I think the wisest course of action would be to open a set amount of slots, say 5 or so, however many you can handle. Then there are maybe another 5 "overflow" slots for people willing to pay double the normal price in order to get their orders in sooner. You also could have a rule that no one can order two openings in a row, so people who haven't gotten slots before can have a chance ahead of those who have. That way you're not getting too many orders at a time, while also having reasonable options for everyone. You could also have a waitlist but...I dunno, thats sort of what you're doing now and I think its more overwhelming than having a set number of slots.
By my way of thinking, if you look at all the major artist artshops -like Neara, Solfeggio, Spot, etc.- their available slots get taken incredibly quick, but there is never a lack of orders, and if people are truly dedicated to acquring a slot then they will get one eventually.
The only other thing I would add to my above comment would be that you maybe have three or so "bribe me" slots. These can be open for people who are willing to offer a really high price in order to have a slot even when you're closed. I mean, you're getting SWAMPED with orders, and its not really fair to you to be expected to complete them, I just think this system would be less haphazard, more accurate, and a lot more logical if you chose to use it....just my opinion though XP
