Remember Glados has all the files, Chells was put first so she probably knows everything about her, as it is she knows her last name ^^

But Chell's last name was [Redacted] on her file and GLaDOS should only know what's on her file...so how does she know her last name?

But she never made any move to make Chell believe her (any more then what she tried) and it was an obvious ruse all along, she technically didn't have to know their last names as she was never going to show Chell her parents anyway...

if chell went in the lab at bring your daughter to work day then she must have been young so wouldnt her parents fill out any kind of forum for her? either way GLaDOS would know chells last name from her parents files

Not necessarily, i've gone to many a bydtwd and never had to fill out anything ....The only parent would (presumably) be her father according to her project (it says something along the lines of "ingredient from daddy's work" ) If she doesn't know Chell's last name then how would she find some other male scientist (out of the many stored in aperture) and just guess that he was her father? I doubt she would do a genetic test all just for a dark joke.
