I would think that it would be kinda cool to have a galaxy themed set of horses, like one could be plantets, one could be a starfield, and one could be a sun or something like that...
like for planet earth:

mm.... perhaps you could have some christmas ponies with christmas hats on them? Christmas is coming soon. Striped red ponies and ponies lined with candy. Yummy.

How about new linearts so therefore that means new positions and such? We could have Quarter Horses, Arabians, Drafts, etc.
Also, Donkeys and or zebra hybrids would be cool.

i was thinking something along those lines as well. and someone earlier said carousel horses, & someone else said paisley, i agree that those would be great!

pegasi in the colors of real birds found in nature
pegasi in fantastical colors/patterns
horses colored like other types of animals (skunks? possums? raccoons? LOL) or perhaps FISH, since those haven't been done yet for any breed.
polka dotted and/or striped, perhaps a clown or circus theme (ringmaster, trapeze artist, etc)
actual circus type horses (with plumes & such)
plushie ponies! we've had the coraline dogs, and this months rats, now time for horses
characters from well known books that have moved into public domain, so no copyright issues (black beauty? robin hood? grimms or hans christian anderson fairy tales?)
art deco, art nouveau
steampunk
loud designs or prints inspired by 60s day glo hippie flower prints or garish 80s sweaters
