All characters use boss mats released during the same "nation" patch cycle as them (i.e., same major number in their versions), except for Sayu (char in 2.0, boss in 1.6) and Aloy (char first available in 2.1, boss in 1.5), and even in their cases, they used recently released bosses (1 patch prior for Sayu, 3 patches prior for Aloy). This has resulted in nearly every single "latecomer" character (12 out of 14) using mats from a boss that's not in their nation, going as far back Yun Jin and Shenhe in 2.4 (they use Inazuma boss mats). Yelan and Xianyun are the only two "latecomer" characters to use bosses from the same regions as them, and that's because Liyue got latecomer bosses to go with them.
Since Escoffier is a latecomer and now here in 5.6 when Fontaine's patch cycle was 4.x, in order for her to use a Fontaine boss's materials, they'd have to either go back to the 4.x bosses (7+ patches prior, completely unprecedented--the longest gap is Clorinde from 4.7 using a boss released 6 patches prior in 4.1) or make a new Fontaine boss--but they probably have some kind of internal soft limit of 7 bosses for the "initial completion" of each nation starting from 2.0: Inazuma, Sumeru, Fontaine, and now Natlan with the release of Escoffier's boss all have 7 bosses each, and all of the 7 bosses per post-1.x nation were released during their corresponding "nation" patch cycles except for the Maguu Kenki, which was released in 1.6. (Mondstadt has only 4 bosses, and Liyue now has 6 bosses, including its 2 latecomer bosses. So far, Liyue is the only nation to have received latecomer bosses, though clearly Mondstadt is next in line to receive them, and I expect we'll eventually get latecomer bosses in the other regions too)
