Same. I keep getting saplings, and as far as I've seen, they're just for decoration.

Everything that's sorted into the "event tokens" section of your item collection will eventually be used for trade-ins. The saplings go in that category, too, so you'll want to hang on to them c: You'll get your chance to use them eventually.
