It is not fair rarity wise. The non is much higher than the sorbet.
As for demand, they both have pretty good demand. Both are easy to trade off since they're used in so many trades as filler to cover gaps.

Very unfair to you! A non is worth 3 sorbets and their side only has ONE sorbet! They both go for their worth so unfair to you.
