I see that people are getting deer and mermaid wolves; how do you get those?!

The deer come from trading in items in the boutique, the deer come from the kelp forest.

How many items are needed to get a mermaid wolf? And for the kelp forest deer, are they only for today? And how common are they?

Out of the items listed on the boutique page, you can choose three to trade in. So you can just pick whichever ones you want to give away, if you have more than three in total.
In the past, pets from the gathering location (like the kelp beds) have stayed available throughout the whole event.

The b-wolves cost one token from the kelp forest, and two from the banner. The deer will probably be there the whole event. I can't tell how common they are yet, but they don't seem all that rare.
