Xaliphax doesn't speak at all, but he thinks for himself much more than a simple animal. He's kinda like a demonic god-horse given to Nicholas by his father because of something Nick doesn't know about yet spoilers.
Xaliphax is pretty much meant to be owned by a higher being like a Daedra, to put it simply.

I can't see a very long interaction but since they happen to have just left Whiterun they could have a brief interaction since they need to grab Eren's horse anyway?

Well, she normally gives a little over two weeks to write this, but for us she just decided "You know, these kids are just starting their finals. Let's do a research paper!" And thus we had a week to complete it because, you know, logic.
