in this case i would suggest uninstalling Java altogether from your computer and download it again to make sure that the old version of java doesn't mess with the new download. after downloading again restart your computer and try coloring. If this doesn't work then I'm not sure what else could be wrong.

In the layer palette: select the layer where the text is and then click on the minus-sign at the bottom of the layer palette and then it should be removed

or you can hide the layer by clicking on the black dot, after you click it will turn into an empty dot or just an outline of the dot then you click it again and the layer is visible again. ^^
