This doesn't really have to do with the January pets, but I was wondering about the rarity of the December pets. The November rarities came out fairly early, around the middle of December, but it's February and the December pets are still unknown rarities. How long does it usually take before the monthly pets get their rarities?

No they all get rarities. The only pets that don't are custom pets.

I also think the last chicken is just a bird on fire. Though I do remember some people waiting for the UR phoenix to grow and some joking it will turn into a cooked bird at the end.

No, they'll all get their rarities eventually.

I wouldn't stress...there are no confirmed 4+ Nick eggs that I have seen. In fact I am fairly certain the fire/ phoenix is the last one,
Lolitaa's remaining eggs are at Day 3 and will almost certainly grow into the fire/ phoenix "nicken"
