GoIV is what most of the serious players are using.
The app will run in the background and read your screen. By doing this, it can detect when you're on a Pokemon's profile page (so long as you haven't scrolled down the profile page). An "IV" button will appear on the bottom left of the screen in the same style as the button on the bottom right, so it doesn't look out of place. When you press on it it will identify the Species, CP, HP, and and ark position of the Pokemon. These can all be edited if the app doesn't get it right on it's own (like if you renamed your Pokemon it won't know what species it is). Once you've checked that it got the stats right you can make it calculate the IV and a message box will appear at the bottom of your screen. The message box will list the different possible IV stat combinations (of Attack, Defense, and HP) and which percentages those would be, then at the bottom it gives you the percent of the lowest possible IV, the highest possible IV, and the average. The important parts are that the app plots the Pokemon's point on the CP ark, and rather than only giving you the min and max possible IV, it details the different IV combos and which percentages they are.
In order to find the exact IVs of your Pokemon, you use both the GoIV and the Pokemon Appraisal feature. First you use GoIV to look at the max IV possibility to see if it has any potential. If it does, then you appraise the Pokemon. Your trainer is going to tell you which it's best stat(s) is/are. For my Snorlax, Candela tells me "It's Attack is it's strongest feature. I'm just as impressed with it's Defense." So, we know that Attack and Defense will be the same number, and they will be higher than HP. Then you use GoIV again to check the IVs once more. but this time you look at the list of possible stats. Look for whichever stat has Attack and Defense as the same number and HP as the lowest number, and bingo, you've got the exact IV. Now and then for low CP mons you may need to power it up once or twice if you really want the exact IV.
Just to be clear, all this app does is read your screen and overlay a button and message box when it is appropriate. It does not communicate with Pokemon Go and Niantic cannot detect that you are using it. The usage of this app does not break Niantic's ToS. Also, GoIV uses the word "Stamina" instead of "HP".
