I like not only the "generosity"-part but also that it would mean that the person who did not get first pick still gets a little choice. They do not get what the other user "lefts over" but they can also choose 2 from 3.
I think I would use it rarely, for pairings I have "high expectations" of or that have very different colors and patterns which can be combined in a wide range. That way I would get one more bunny to chose from which might meet my expectations a bit more. You never know what you'll get, when you are breeding and one more option can be nice.
That number 5 is up for adoption would totally be ok for me, I would use it to get a broader choice.
