I know I said I was done...but I have to come back here and ask something else ;A; Do our four customs count to add up to our 15 deersserts, or is it you get 4 customs +1 for guest artists and 15 adopted deersserts?

And do breedings count towards customs or the other 15? O.o

Your four customs count toward your overall deerssert count.
Breedings count as a normal deerssert, since they grow into a normal deerssert & you ultimately don't control every detail of them.
