If that rat is originally an '10 rare then yes, it would be fair (and a little over IMO) using the 1|2 (ig: 2 2011 uc = 2010 UC but 2011 uc also = 2011 r) up to you if you wanna take it though!
The rat is from Valentine's 2012, so it's unfair to the other person.

I don't think sorbs typically fetch 1 non.
I think each sorb is usually worth about 0.5-0.75 non even true date.
But better have a second opinion! I might go wrong.
I can't give a full reply right now, but TD sorbs do fetch 1 non (1.5 for pink sorb)
