what do we have to do with our cats if we decide to quite rise?

If you want, we can mark the character deceased. Then, you can continue using it as a standalone character outside of Rise. You just aren't allowed to use the official Rise reference.
You can also ask that it is readopted, or gift it to someone else if you have owned it for longer than two months.

Tacking onto Dia's post, you can also sell the cats, trade them for art of your current characters, or exchange your rise cats for other characters (though if selling, we don't recommend/prefer you don't going over the price they would be a custom + art worth) by posting on the advertisements thread.
