I'm sure it's right in front of my face, but where do I change the settings for pen pressure? Or is there even a setting for pen pressure?

If thats Opacity you are talking about -is rubbish at art language-

You know where it says "Brush size"
Look below that and you will see opacity move it up and down to make your text Lighter/Darker

Pen pressure is only with tablets, it's how hard you press the tablet pen against the tablet. Hope that helps.

In chibipaint, you clicky the circles next the the slidery thingys onteh brush box...did that make sense? if the circle is black then pen pressure is on
