^^ Only issue there is that Ammit the Devourer canonically lives in the Hall of Judgement; she has a duty there and as such would not be able to leave.
In addition, you're gonna have to come up with a good reason for Jay being at Camp Half-Blood - the Duat itself is currently under threat. Maybe they could have come to camp looking for aid, only to discover that the Greek demigods are having problems of their own?
Also because she follows the Path of Anubis, I believe she has to have died in order to merge with Anubis - at least, the only other known host of Anubis, Walt Stone, died before hosting Anubis in his body asgdhfkglgh
I also just realised she's taller than most men lmao
