[this is kind of a late entry in the subject but,] you can't exactly center the text, rather it's that as you insert text it's moves across the box so it's fills up that line [until the lines is filled of course, then you'll have to begin typing on the lower one, so on and so on]

How big exactly is the signature box?

depends on your browser. i use safari and the signature box is typically 730-740x400 px.
i say 730-740 px only because when you use left align the signature box shrinks down to 730px, but when you right align the signature box expands to 740px. because forumatic is weird. youll have to get a second opinion from a different browser user, maybe
i dont know what browser you have so i may not be of much help

700 x 400 is usually your best bet for being compatible with the smaller browsers and screens.
